Chicken

  • 1.5 lb Chicken drumsticks, or a mix; bone-in for best flavor, thighs

Spices & Aromatics

  • 2 tbsp Ginger fresh, grated
  • 1 tbsp Garlic minced or finely grated
  • 4 tsp Peppercorns freshly ground; coarsely grind a small amount for garnish, black
  • 1.5 tsp Salt to taste
  • 1/2 cup Coriander fresh, chopped (leaves and stems)

Preparation

  • Wash the chicken pieces thoroughly and pat them completely dry with paper towels.
  • Peel and grate the ginger. Mince or finely grate the garlic. Chop the coriander leaves and stems.
  • Grind the majority of the peppercorns to a fine powder. Set aside a small amount (about 1/2 tsp) of coarsely ground peppercorns for garnish.

Cooking the Chicken

  • Heat the butter (and optional oil) in a large skillet or pan over medium heat. Be careful not to burn the butter.
  • Add the grated ginger and garlic. Sauté for about 30 seconds until fragrant.
  • Add the chicken pieces, pepper powder, and salt. Stir to coat the chicken evenly.
  • Fry on high heat for 5 minutes, turning the pieces to ensure even browning. Continue frying until the chicken changes color, approximately 10-12 minutes.
  • Reduce heat to low, cover the pan, and cook for 15-20 minutes, turning the chicken occasionally until tender and cooked through.
  • Remove the lid, increase the heat to medium-high, and add the lemon juice. Cook until the sauce slightly thickens and the chicken is crisp.
  • Garnish with the reserved coarsely ground peppercorns and fresh coriander leaves.
