  • 1/2 cup Water or as needed
  • 1 tbsp Oil for searing (optional), vegetable or canola

Marinate the Chicken

  • Marinate the chicken in salt, black pepper, 1 tbsp ginger-garlic paste, and 1 tbsp lemon juice for at least 30 minutes, or up to 2 hours in the refrigerator for maximum flavor.

Sauté Aromatics

  • Heat butter (and optional oil) in a pan over medium heat. Add peppercorns, cloves, and dried red chilies; sauté for 1 minute until fragrant.

Cook Ginger Garlic

  • Add the remaining ginger-garlic paste and sauté for another minute until fragrant and lightly golden.

Sear the Chicken

  • Add the marinated chicken to the pan and cook over medium-high heat, stirring occasionally, for about 5-7 minutes until browned on all sides. If using bone-in pieces, adjust cooking time accordingly.

Simmer the Chicken

  • Pour in 1/2 cup of water, reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and tender.

Finish and Serve

  • Stir in the remaining lemon juice. Cook for another 5 minutes, uncovered, allowing the sauce to slightly thicken. Remove from heat and serve hot.
