Ingredients
 

Chicken & Marinade

  • 850 gm Chicken 1 medium-sized chicken, cut into 1-inch pieces; bone-in or boneless thighs work best
  • 1 tbsp Soy Sauce adds depth of flavor and helps brown the chicken
  • 1 tsp Garlic Powder
  • 1 tsp Ginger Powder
  • 1/2 tsp Pepper freshly ground is best, black
  • 1/2 tsp Salt to taste, adjust as needed

Preparation

  • Wash the chicken and pat it completely dry with paper towels. This is crucial for achieving crispy skin.
  • In a bowl, combine the chicken with soy sauce, garlic powder, ginger powder, black pepper, and salt. Mix well to ensure the chicken is evenly coated.
  • Let the chicken marinate for at least 15 minutes (longer is better).

Frying the Chicken

  • Heat the butter and oil in a large wok or heavy-bottomed skillet over medium-high heat. Work in batches to avoid overcrowding the pan.
  • Fry the chicken pieces until golden brown and cooked through, turning occasionally to ensure even browning and avoid burning. This will take about 6-8 minutes per batch.
  • Remove the fried chicken from the pan and place it on a wire rack or paper towel-lined plate to drain excess oil.
  • Repeat with remaining chicken batches.

Pepper Sauce & Finishing

  • Once all the chicken is fried, remove the oil from the wok, reserving about 1 tablespoon if desired. Add the water and coarsely ground black pepper to the wok. Bring to a boil.
  • If using cornstarch, whisk it with 1 tablespoon of cold water to form a slurry. Add it to the boiling water and stir constantly until the sauce thickens slightly.
  • Return the fried chicken to the wok and toss gently to coat it with the pepper sauce.
  • Cook for another minute or two until the sauce has reduced slightly and the chicken is heated through.

Serving

  • Serve the Crispy Pepper Chicken hot. Enjoy!

Expert Tips for Perfect Pepper Chicken

  • For extra crispy chicken, ensure the chicken is thoroughly dry before frying. You can even let it sit in the refrigerator uncovered for 30 minutes after marinating.
  • Don't overcrowd the pan when frying. This will lower the oil temperature and result in soggy chicken instead of crispy chicken.
  • Adjust the amount of pepper to your liking. Start with less and add more if needed.
  • Serve immediately for the best texture and flavor. Leftovers can be stored in the refrigerator and reheated, but the crispiness may be slightly diminished.
