Ingredients

- 0.75 cup Chicken cooked, cubed or minced
- 0.5 cup Mozzarella Cheese grated; cheddar or other melting cheese may be substituted
- 5 Eggs large
Seasoning & Liquids
- 2 tbsp Milk whole milk or alternative
- 1 tsp Salt or to taste
- 1 tsp Chili Powder or to taste; adjust to your spice preference, red
- 1 tsp Garlic minced
- 1 tbsp Olive Oil
Instructions
Prepare the Chicken and Vegetables
- Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add finely chopped onion and sauté for 2-3 minutes until softened. Stir in cooked chicken and cook for another minute. Add the chopped spinach and cook until wilted, about 2-3 minutes.
