Vegetables

  • 1 medium Onion finely chopped
  • 1 cup Spinach finely chopped, fresh

  • 0.75 cup Chicken cooked, cubed or minced
  • 0.5 cup Mozzarella Cheese grated; cheddar or other melting cheese may be substituted
  • 5 Eggs large

Seasoning & Liquids

  • 2 tbsp Milk whole milk or alternative
  • 1 tsp Salt or to taste
  • 1 tsp Chili Powder or to taste; adjust to your spice preference, red
  • 1 tsp Garlic minced
  • 1 tbsp Olive Oil

Instructions
 

Prepare the Chicken and Vegetables

  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add finely chopped onion and sauté for 2-3 minutes until softened. Stir in cooked chicken and cook for another minute. Add the chopped spinach and cook until wilted, about 2-3 minutes.

Prepare the Egg Mixture

  • In a large bowl, whisk together eggs, milk, salt, and red chili powder until well combined.

Assemble and Bake

  • Preheat oven to 350°F (175°C). Line a 9-inch oven-safe skillet or baking dish with parchment paper for easy removal. Spread the chicken and spinach mixture evenly in the prepared pan.
