Ingredients
Vegetables
- 1/2 cup Bell Peppers finely chopped; red bell pepper can be substituted, green
- 1/2 cup Peas fresh or frozen; carrots can be substituted
- 1/2 cup Onion finely chopped
- 1 Chili adjust to taste, finely chopped; optional, green
- 1 Tomato finely chopped
- 1/2 cup Spinach chopped
- 2 Spring Onions finely chopped
Pasta & Dairy
- 1 cup Elbow Macaroni cooked al dente
- 1/2 cup Crumbled Feta Cheese or other cheese of your choice
Instructions
Prepare the Vegetables
- Warm olive oil in a pan. Add onions and sauté for 1 minute. Add green chilies and sauté for another minute. Add bell peppers, peas, spinach, and tomatoes. Season with salt, coriander powder, and garam masala. Cook until vegetables are tender. Stir in spring onions and remove from heat.
Combine Ingredients
- Combine the cooked macaroni with the vegetable mixture. Set aside to cool.
Prepare the Egg Mixture
- In a bowl, gently whisk the eggs with salt and pepper. Do not over-whisk.
Assemble and Bake
- Preheat oven to 180°C (350°F). Grease a baking loaf tin or oven-safe dish.
- Combine the cooled vegetable and macaroni mixture with the egg mixture and crumbled feta cheese.
- Pour the mixture into the prepared baking tin.
- Bake for 15 minutes at 180°C (350°F), then reduce the temperature to 160°C (320°F) and bake for another 10 minutes, or until a toothpick inserted into the center comes out clean.
Serve
- Let the frittata cool slightly before slicing and serving. Garnish with fresh coriander and serve hot with your favorite sauce or chutney.
