Ingredients

  • 3 tbsp Butter unsalted, room temperature
  • 2 tbsp Sesame Seeds
  • 1 cup Coconut Milk freshly made or high-quality canned. see instructions for making fresh coconut milk., thick

  • 1 Murukku Maker with a 3-hole disc

Instructions
 

Make Fresh Coconut Milk

  • Break a large coconut into halves. Remove the coconut meat, chop, and peel. Blend the coconut meat with 3/4 - 1 cup of warm water until finely powdered. Strain the mixture to obtain thick coconut milk.

Prepare Urad Dal Flour (Optional, if not using pre-made)

  • Dry roast 1 cup of whole urad dal until the raw smell fades. Let cool completely. Grind to a fine powder and sieve.

Combine Dry Ingredients

  • In a large bowl, sift together the rice flour, urad dal flour, coriander powder, red chili powder, pepper powder, cumin powder, asafoetida, and salt.

Add Wet Ingredients

  • Add the softened butter and sesame seeds to the dry ingredients. Gently mix using your fingertips until the mixture resembles breadcrumbs.

Form the Dough

  • Gradually add the coconut milk, mixing until a soft, smooth dough forms. The amount of coconut milk needed may vary; add as needed to achieve the right consistency.

Rest the Dough

  • Cover the dough and let it rest for 20-30 minutes to allow the flavors to meld.

Heat the Oil

  • Heat about 2 inches of oil in a heavy-bottomed pan or kadai to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Shape and Fry the Murukku

  • Fill the murukku maker with a small amount of dough. Grease 3 ladles, a small plate, or baking sheet. Squeeze the murukku onto the greased surface and gently lower it into the hot oil.

Cook and Drain

  • Fry the murukku until golden brown and crispy, flipping occasionally. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Cool and Store

  • Repeat the process with the remaining dough. Allow the murukku to cool completely before transferring them to an airtight container for storage.
