Prepare the Poha

  • Sieve the thin poha to remove any fine particles that may burn during roasting.

Roast the Poha

  • Heat a heavy-bottomed pan or kadhai over low heat. Add the poha and gently roast for 3-5 minutes, stirring frequently to prevent burning. The poha will reduce in volume and become slightly crisp.
  • Remove from heat and set aside to cool slightly.

Make the Tempering

  • In the same pan, heat the oil. Add the mustard seeds and let them crackle.
  • Add the roasted chickpeas and groundnuts; sauté until fragrant and lightly browned.
  • Stir in the asafoetida, sesame seeds, and curry leaves. Sauté for a few seconds.
  • Add the turmeric powder and salt; mix well.

Combine and Finish

  • Add the roasted poha to the tempering. Mix thoroughly to combine all ingredients evenly.
  • Remove from heat and allow to cool completely before serving.
  • Serve your freshly made Poha Chivda with a cup of Masala Chai or your favorite beverage.
