Ingredients
For the Jackfruit Balls
- 2 cup Jackfruit about 2 medium, fresh jackfruit bulbs
- 1 cup Semolina also known as suji; roasted for enhanced flavor
- 1/4 cup Rice Flour
- 2 tbsp Coconut freshly grated
- 1 cup Coconut Sugar organic; adjust to taste based on jackfruit sweetness
- 1/2 tsp Salt to taste
- 1 cup Ghee for deep frying, or vegetable oil
For the Coconut Milk Soaking Sauce
- 2 cup Coconut Milk thick
- 1 tbsp Coconut Sugar organic
- 1 pinch Cardamom Powder also known as elaichi
Instructions
Prepare the Jackfruit Mixture
- Grind jackfruit, coconut sugar, grated coconut, and salt in a food processor until smooth. Do not add water.
- Mix the semolina and rice flour into the jackfruit mixture. Let it rest for 15 minutes to allow the flours to absorb the moisture.
Shape and Fry the Balls
- Roll the mixture into small, round balls.
- Heat the ghee or oil in a deep pan over medium heat. Gently drop the jackfruit balls into the hot oil.
- Fry the balls, turning occasionally, until they are golden brown and crispy.
