For the Jackfruit Balls

  • 2 cup Jackfruit about 2 medium, fresh jackfruit bulbs
  • 1 cup Semolina also known as suji; roasted for enhanced flavor
  • 1/4 cup Rice Flour
  • 2 tbsp Coconut freshly grated
  • 1 cup Coconut Sugar organic; adjust to taste based on jackfruit sweetness
  • 1/2 tsp Salt to taste
  • 1 cup Ghee for deep frying, or vegetable oil

Prepare the Jackfruit Mixture

  • Grind jackfruit, coconut sugar, grated coconut, and salt in a food processor until smooth. Do not add water.
  • Mix the semolina and rice flour into the jackfruit mixture. Let it rest for 15 minutes to allow the flours to absorb the moisture.

Shape and Fry the Balls

  • Roll the mixture into small, round balls.
  • Heat the ghee or oil in a deep pan over medium heat. Gently drop the jackfruit balls into the hot oil.
  • Fry the balls, turning occasionally, until they are golden brown and crispy.
