Ingredients

- 1 cup Rice Flour
- ⅛ cup Gram Flour
- 1 tsp Ajwain seeds
- 1 tbsp Sesame Seeds
- 1 tsp Salt
Instructions
- Remove the thick stems from the spinach and fenugreek leaves.
- Thoroughly wash the spinach and fenugreek leaves.
- Boil the greens with a pinch of salt and baking powder. This helps retain their vibrant green color.
- Blend the boiled greens into a smooth puree. Set aside to cool completely.
- In a large bowl, combine the rice flour, gram flour, ajwain seeds, sesame seeds, and salt.
- Add the cooled spinach-fenugreek puree and the oil to the dry ingredients.
- Mix well and knead into a smooth, pliable dough. Cover and let it rest for a few minutes.
- Grease a murukku press or a chakli mould. Fill it with a portion of the dough.
- Press the murukku directly onto a greased baking sheet, forming spiral shapes.
- Heat the oil for frying in a deep wok or kadai over medium heat. Ensure the oil is hot enough before frying.
- Carefully slide the murukku from the baking sheet into the hot oil. Fry in batches, avoiding overcrowding.
- Fry the murukku, turning occasionally, until they are golden brown and crispy.
- Remove the fried murukku from the oil and place them on a plate lined with absorbent paper to drain excess oil.
- Once cooled completely, store the murukku in an airtight container to maintain their crispness.
