Ingredients
For the Coconut Mixture
For the Tempering
- 3 tbsp Oil vegetable or coconut oil
- 1 pinch Asafoetida hing
- 1 tbsp Gram black
- 1 tbsp Chickpea split
- 1 tsp Cumin seeds
- 8-10 Fenugreek methi, seeds
- 1/2 Onion finely chopped
- 3 cloves Garlic peeled
- 4 Chili green, split lengthwise
- 1 tsp Mustard seeds
- 1 small cup Coriander finely chopped
- 1 small cup Mint finely chopped, leaves
- 2 Chili for garnish (optional), red
- 4-5 Curry Leaves for garnish (optional)
Instructions
Prepare the Coconut Mixture
- Combine shredded coconut, salt, turmeric powder, and tamarind (or paste) in a bowl. Mix well and set aside.
Prepare the Tempering
- Heat oil in a pan over medium heat. Add asafoetida, urad dal, chana dal, cumin seeds, and fenugreek seeds. Fry until golden brown.
- Add green chilies and garlic. Sauté briefly.
- Add finely chopped onion and sauté for about 2 minutes.
Combine and Simmer
- Add the coconut mixture to the pan. Stir well and cover. Simmer for 5 minutes, stirring occasionally.
- Stir in coriander and mint leaves. Cook until slightly dry.
- Remove from heat and let cool completely.
Blend the Chutney
- Transfer the cooled mixture to a blender. Add water as needed to achieve a medium-smooth consistency. Blend until smooth.
Garnish and Serve
- Heat oil in a small pan. Add red chilies and curry leaves (optional). Fry briefly.
- Pour the tempering over the chutney and serve with dosas and idlis.
