Ingredients
- 500 gm Eggplant brinjal, cut into pieces -
- 5 nrs Chilli green, slitted -
- 1.5 tsp Salt or as per taste
- 1 tsp Turmeric turemric
- 2 tsp Garam Masala
- 10 gm Tamarind
- To ground
- 50 gm Sesame Seeds white
- 50 gm Nuts ground, dry
- 50 gm Cashews cashewnuts
- Temper
- 100 ml Gingelly Oil
- 1 tsp Peppercorn
- 1/2 tsp Fenugreek Leaves fenu greek
- 1 Curry Leaves curryleaf
Instructions
Prepare the Tempering
- Heat gingelly oil in a kadai (wok or deep pan). Add the peppercorns, fenugreek seeds, and curry leaves. Sauté until the spices are fragrant.
Sauté the Eggplant
- Add the eggplant and green chilies to the kadai. Sauté until the eggplant is lightly browned.
Add the Paste and Spices
- Stir in the prepared paste of tamarind, sesame seeds, mixed nuts, and cashews. Cook over low heat, stirring frequently, until the raw aroma of the nuts dissipates. Add the turmeric powder, salt, and garam masala. Continue to stir well.
Simmer and Finish
- Add a little water if needed to adjust the consistency. Simmer for about 10 minutes, or until the oil separates from the Brinjal Masala. Serve hot as a side dish with your favorite biryani.
