Ingredients

- 1/4 tsp Mustard Seeds rai
- 1 tsp Gram black, split, urad dal
- 1 tsp Cumin seeds
- 1 tsp Cumin jeera powder, powder
- 1 tsp Chili Powder
- 1/4 tsp Turmeric haldi, powder
- 1.5 tsp Salt or to taste
Aromatics & Vegetables
- 1 tbsp Curry Leaves
- 3 Onion chopped, sambhar onions or shallots, small
Instructions
Preparation
- Peel and thinly slice the small onions lengthwise.
Tempering the Spices
- Heat oil in a kadai (wok or deep frying pan). Add mustard seeds, split black gram, cumin seeds, and curry leaves. Cook until the seeds begin to sputter and crackle.
Sautéing the Onions
- Add the sliced onions and sauté until they become translucent and slightly softened.
Building the Masala
- Add cumin powder, chili powder, turmeric powder, and salt. Cook for 1-2 minutes, stirring constantly, until the raw smell of the spices disappears.
Adding the Eggs
- Carefully cut the hard-boiled eggs into quarters lengthwise. Gently add them to the masala and stir gently to avoid breaking them.
Final Cooking
