Ingredients
Okra
- 250 gm Okra
Spice Paste
- 2 tsp Garlic Paste
- 2 tsp Ginger Paste
Spices
- 2 tsp Coriander ground
- 1 tsp Cumin Seeds
- 1 tsp Chili Powder red
- 1 tsp Mango Powder amchur, dry
- 1 tsp Turmeric Powder
Instructions
- Wash the okra and thoroughly pat it dry to minimize slime during cooking. Cut the okra into small pieces.
- Heat 1 tablespoon of oil in a heavy-bottomed pan (like a cast iron skillet) over medium-high heat. Shallow fry the okra until slightly blistered and tender-crisp. This helps to remove excess moisture and enhance the flavor. Set the fried okra aside.
- In the same pan, heat the remaining 1 tablespoon of oil. Add the ginger paste and sauté for a few seconds until fragrant. Add the garlic paste and sauté until lightly golden.
- Add the ground coriander, cumin seeds, red chili powder, and turmeric powder to the pan. Stir continuously for about a minute until the spices are fragrant and toasted. If the spices begin to stick, sprinkle in a little water.
- Return the fried okra to the pan. Season with salt and dry mango powder. Toss everything together to coat the okra evenly with the spice mixture.
- Serve the Bhindi Masala hot, garnished with fresh coriander leaves.
