Instructions

Prepare the Yeast Mixture

  • Add instant yeast to lukewarm water. Stir in sugar and 2 tbsp butter. Let stand for 10 minutes until foamy.

Make the Dough

  • In a large bowl, combine flour and salt. Add the yeast mixture and mix until a dough forms.

Knead the Dough

  • Turn the dough out onto a lightly floured surface and knead for 10-12 minutes, or until the dough passes the windowpane test (you should be able to stretch a small piece of dough thinly enough to see light through it).

First Rise

  • Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a damp cloth and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Shape the Rolls

  • Punch down the dough to release the air. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.

Second Rise

  • Place the rolls in a greased baking tin, leaving some space between them. Cover and let rise for another 30-45 minutes, or until doubled in size.

Bake the Rolls

  • Preheat oven to 200°C (400°F). Brush the rolls with milk (optional). Bake for 12-15 minutes, or until golden brown and sound hollow when tapped on the bottom.

Finish & Serve

  • Remove from oven and immediately brush with melted butter. Serve warm.

Recipe Notes

Expert Tips for Perfect Dinner Rolls

  • Use fresh ingredients: Fresh yeast is key for a good rise. Check its expiration date before starting.
  • Don't overknead: Overkneading can result in tough rolls. Aim for a smooth, slightly elastic dough.
  • Proofing is crucial: Make sure the yeast mixture proofs properly before adding it to the flour; it should be bubbly.
  • Adjust baking time: Ovens vary, so keep an eye on your rolls and adjust baking time as needed. A toothpick inserted into the center should come out clean.
