Ingredients
For the Donuts
- 1 cup All-Purpose Flour organic, sifted
- 1/2 cup Milk lukewarm
- 2 tbsp Sugar granulated
- 2 1/2 tbsp Sugar for dusting, powdered
- 1/2 tsp Yeast active, dry
- 2 drops Vanilla Extract
- 1 tbsp Butter melted, plus extra for brushing, unsalted
- 1/2 tsp Salt
For the Chocolate Ganache (Optional)
- 100 grams Chocolate dark, finely chopped
- 50 grams Heavy Cream fresh
- 1 tbsp Butter for ganache, unsalted
- Optional Sprinkles for garnish, or sugar balls
Instructions
Activate the Yeast
- Activate yeast in lukewarm milk with 2 tablespoons of granulated sugar. Let stand for 5-10 minutes until foamy.
Combine Wet and Dry Ingredients
- In a large bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture, melted butter, and vanilla extract.
Knead the Dough
- Gently mix until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
First Rise
- Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shape the Donuts
- Punch down the dough to release the air. Roll out the dough to about 1/2 inch thickness. Use a 2-3 inch cookie cutter or glass to cut out donut shapes. Use a smaller cookie cutter or bottle cap to cut out the centers.
Second Rise
- Place the donuts on a baking sheet lined with parchment paper. Lightly brush with melted butter. Let rise for another 30 minutes.
Bake the Donuts
- Preheat oven to 375°F (190°C). Bake for 12-15 minutes, or until lightly golden brown.
Make the Ganache (Optional)
- Combine chopped dark chocolate, heavy cream, and butter in a heatproof bowl set over a pan of simmering water (double boiler). Stir until smooth and glossy. Remove from heat and let cool slightly.
Glaze and Garnish
- Once the donuts have cooled slightly, dip them in the ganache (if using). Dust with powdered sugar and garnish with sprinkles or sugar balls, if desired.
Recipe Notes
Expert Tips for Perfect Eggless Donuts
- Use lukewarm milk – not too hot, or you'll kill the yeast!
- Don't overmix the dough. Overmixing can lead to tough donuts.
- Let the donuts rise properly for a light and fluffy texture. A warm place will help speed up the process.
- For perfectly even donuts, use a donut cutter or cookie cutters for consistent size and shape.
