Dough Ingredients
- 2 cup All-Purpose Flour
- 3/4 cup Milk warm
- 2 tsp Active Yeast dry
- 1 Tbsp Sugar
- 2 Tbsp Butter softened
- 1/2 tsp Salt or to taste
- 1/4 cup Water approximately, as needed
For Brushing and Greasing
- 2 Tbsp Butter melted
- 2 Tbsp Milk
- 2 Tbsp All-Purpose Flour for dusting
Instructions
- In a large mixing bowl, sift together the all-purpose flour and salt. Set aside.
- In a separate bowl, activate the yeast by combining the warm milk, sugar, and active dry yeast. Let stand for 10 minutes until frothy.
- Add the activated yeast mixture to the dry ingredients. Mix until a shaggy dough forms.
- Begin kneading the dough, adding water as needed, 1 tablespoon at a time. The dough should be soft and slightly sticky.
- Add the softened butter to the dough. Knead for 6-7 minutes until the dough becomes smooth and elastic. Kneading develops the gluten, which gives the Ladi Pav their soft texture.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1.5 hours, or until doubled in size.
- Punch down the risen dough to release the air. Lightly dust a clean surface with flour and knead the dough for another 3-4 minutes.
- Divide the dough into 12 equal-sized balls. Arrange them close together in a greased baking tray. This close proximity allows the rolls to rise upwards, creating the classic Ladi Pav shape.
- Cover the rolls with a damp cloth and let them rise for another 30 minutes.
- Gently brush the tops of the rolls with milk. Be careful not to deflate them.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until golden brown.
- As soon as the rolls come out of the oven, brush generously with melted butter. Cover loosely with foil to keep them soft. Let cool slightly before serving.

- For extra-soft pav, brush the tops with a generous layer of melted butter immediately after baking and then cover loosely with a clean kitchen towel for 10 minutes to retain steam and softness.

- To achieve the classic “pull-apart” effect, place the dough balls close together in the baking tray so they just touch—this encourages soft sides and gives Ladi Pav its iconic shape.
