Ingredients
Dough
- 500 gm All-Purpose Flour maida
- 15 gm Milk Powder
- 10 tsp Salt or as per taste
- 15 gm Sugar
- 25 gm Butter
- 150 ml Milk lukewarm
- 150 ml Water lukewarm
- 18 gm Yeast
Topping (Optional)
- 2 tbsp Sesame Seeds
Instructions
- In a small bowl, combine the lukewarm milk and water. Sprinkle the yeast over the mixture and stir gently. Let it stand for about 5-10 minutes until the yeast is foamy. This activates the yeast and ensures a good rise.
- In a large bowl, whisk together the all-purpose flour, milk powder, salt, and sugar.
- Add the yeast mixture to the dry ingredients. Combine the wet and dry ingredients using your hands until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5 minutes. Add the softened butter and continue kneading for another 15-20 minutes until the dough is smooth and elastic. The dough should pass the windowpane test: you should be able to stretch a small piece of dough thin enough to see light through it without it tearing easily.
- Lightly grease a large bowl with oil. Place the dough in the bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Punch down the dough to release the air. Divide the dough into 8 equal pieces and shape each piece into a smooth roll.
- Place the rolls on a baking sheet lined with parchment paper. Cover loosely with plastic wrap and let them rise for another 30-45 minutes, or until almost doubled.
- Preheat the oven to 400°F (200°C).
- Brush the tops of the rolls with milk wash. If desired, sprinkle with sesame seeds.
- Bake for 15-20 minutes, or until golden brown.
- Immediately after baking, brush the rolls with melted butter. This adds flavor and creates a soft crust. Let the rolls cool slightly before serving.
Recipe Notes
Good To Know
- Proving time is crucial for bread making. Use fresh yeast for best results.
- For extra-soft rolls, brush with melted butter after baking and cover with a towel for 10 minutes to trap steam.
- For a sweeter flavor and richer color, add 1-2 tablespoons of sweetened condensed milk to the dough.
- For a vegan version, use plant-based milk, oil/vegan butter, and soy/coconut milk powder.
- For a golden crust, place a bowl of water in the oven while baking to create steam.
Expert Tips
- Don't overknead the dough, as this can result in tough rolls. Knead just until smooth and elastic.
- Ensure the yeast is active by proofing it in warm water with a pinch of sugar before adding it to the other ingredients.
- For a richer flavor, consider adding a tablespoon or two of olive oil to the dough.
Storage Instructions
- Store leftover rolls in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
