Ingredients
 

For the Rabri (Creamy Milk Base)

  • 5 cup Milk full cream milk
  • 0.5 cup Sugar

  • 10 grams Pistachios and chopped, blanched, peeled
  • 10 grams Almonds and chopped, blanched, peeled
  • 1 gm Saffron Strands broiled
  • 10 grams Pistachios and slivered, blanched, for garnish, peeled
  • 10 grams Almonds and slivered, blanched, for garnish, peeled

Instructions
 

Prepare the Rabri

  • Reduce 5 cups of full-cream milk in a heavy-bottomed pan over medium-low heat, stirring frequently to prevent burning, until it thickens to a creamy consistency. This may take 45-60 minutes. Stir in 0.5 cups of sugar and continue to cook until the sugar dissolves and the mixture thickens further.

Incorporate Flavorings

  • Remove the rabdi from the heat and stir in 1 cup of custard apple pulp and 0.25 teaspoon of cardamom powder. Mix well to combine.

Garnish and Serve

  • Gently fold in 10 grams each of chopped pistachios and almonds. Sprinkle the broiled saffron strands over the top. Garnish with slivered pistachios and almonds. Chill the rabdi thoroughly in the refrigerator for at least 2 hours before serving. Serve chilled.
