Ingredients
 

For the Rabdi

  • 0.5 ltr Milk whole milk recommended for best creaminess
  • 1/4 cup Sugar
  • 1/2 tsp Cardamom Powder ground cardamom (elaichi)
  • 1/4 cup Pistachios shelled and roughly chopped

For the Apple

  • 1 Apple one medium-sized apple, half diced, half pureed

Instructions
 

Prepare the Rabdi

  • Boil 0.5 liters of whole milk in a heavy-bottomed pan over medium heat.
  • Reduce heat to low and continue to simmer, stirring frequently to prevent sticking and burning.
  • As the milk simmers, a creamy layer (malai) will form on the surface. Gently scrape this malai and incorporate it back into the milk.
  • Continue to simmer and stir, allowing the milk to reduce to approximately one-third of its original volume. This process typically takes 30-45 minutes.
  • Once reduced, stir in the sugar and cardamom powder. Continue stirring until the sugar has completely dissolved and the rabdi has thickened to your desired consistency.
  • Stir in the chopped pistachios.
  • Remove from heat and let the rabdi cool slightly.

Incorporate the Apples

  • Add the apple puree to the cooled rabdi. Gently stir to combine.
  • Fold in the diced apple pieces.
  • Garnish with additional pistachios (optional).
  • Refrigerate for at least 30 minutes to allow the flavors to meld and the rabdi to chill completely before serving.
  • Serve chilled and enjoy!
