Sheermal is traditional, saffron flavored flat #bread and is a rare delicacy in the regions of Nawabs It is mildly sweet in taste and is sometimes enjoyed with Kebabs.Sheermal is a mildly sweet#Bread made out of maida, leavened with yeast, baked in a tandoor or oven. Sheermal was traditionally made like roti.

  • Combine yeast, 1 tbsp sugar with 1/4 cup of warm water. Stir until well mixed and allow it to rest for few minutes.
  • In another bowl, whisk 2 tbsp sugar with milk. Whisk. Add salt and vegetable oil. Stir well.
  • Add the mixture to the yeast bowl and stir thoroughly. Mix the flour in gradually.
  • Knead for 5minutes.Cover the bowl with a lid or plastic wrap and allow it to rise for about an hour.
  • Take a fistful of the batter and flatten to an oval shape, and place them on a well-floured bake ware.Prick with fork.
  • Brush the sheermals surface with saffron milk Sprinkle sheermals with sesame seeds.
  • Preheat oven to 160º C, and bake sheermals for 10-12minutes.
  • Garnish with -coconut slice ,roasted cashewnut and glazed cherry before serving .

Recipe Notes

The warm water in the recipe for roti was replaced with warm milk sweetened with sugar and flavored with saffron.
