Instructions

  • Heat oil in a pan add add mustard seeds.
  • Once they splutter, add the veggies and saute for 1 minute. Add the turmeric powder and salt and cook for 1 more minute.
  • Now add the schezwan sauce. Mix well and take off the stove. Add to the idli batter and mix well.
  • Pour the batter in idli moulds and let it steam for 15 minutes. Your schezwan idli is ready

Recipe Notes

Dont cook the veggies and sauce for too long. Keep it short to retain the flavour.

Additional Tips

  • For extra crunch and flavor, pan-fry or shallow-fry the idli cubes until golden before tossing them in the Schezwan sauce and veggies—this step helps the idlis hold their texture and soak up the sauce better.
  • If you prefer a milder heat, blend a tablespoon of tomato ketchup into the Schezwan sauce; this balances the spice and adds a subtle sweetness that pairs well with the tangy veggies.
  • To make this dish vegan, ensure your Schezwan sauce is free from animal products and consider topping the finished idlis with toasted sesame seeds or chopped roasted peanuts for added richness and crunch.
  • Serve Schezwan Idli as an appetizer by skewering the saucy idli cubes with toothpicks, garnishing with chopped spring onions and a squeeze of lime for a party-friendly presentation.
