  • 4 tbsp Oil vegetable or coconut oil
  • 1/4 cup Coriander chopped, dhania

Prepare the Oats

  • Dry roast rolled oats in a pan over medium heat until lightly browned and fragrant. Set aside.

Sauté the Vegetables and Spices

  • Heat oil in a pan. Add mustard seeds, cumin seeds, urad dal, and chana dal. Once they splutter, add asafoetida and green chilies. Sauté for a few seconds.
  • Add finely chopped onions, tomatoes, bell peppers, and carrots. Stir in turmeric powder and salt. Sauté until vegetables are slightly softened.

Combine and Simmer

  • Add sambar powder and stir well. Pour in 4 cups of water and bring to a boil. Gently add the roasted oats and mix thoroughly.
  • Reduce heat to low, cover the pan, and simmer for 10 minutes.

Finish and Serve

  • Turn off the heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with fresh coriander leaves. Serve hot with raita (yogurt dip) or your favorite side dish. Optional: Add roasted cashews for added crunch.
