- 2 cup Rolled Oats
Vegetables
- 1 Onion chopped, medium
- 1 Tomato chopped
- 1 Carrot finely chopped
- 1/2 cup Peas green
- 1/2 cup French Beans chopped
- 1 Bell Peppers capsicum, chopped
Spices and Flavorings
- 1/2 Lemon juiced
- 2 Chillies dried, red
- 1 pinch Asafoetida hing
- 1 tsp Cumin Seeds
- 1/2 tsp Mustard Seeds
- 7 Curry Leaves
- Salt to taste
- Pepper black, to taste
- 1/2 tsp Oregano dried
Instructions
- Dry roast the rolled oats in a wok or large skillet over medium heat for 5-7 minutes until fragrant. This enhances their nutty flavor and creates a pleasant texture. Set the toasted oats aside.
- Heat the oil in the same wok over medium heat. Add the curry leaves, cumin seeds, dried red chilies, and asafoetida. Sauté for about 30 seconds until the spices are fragrant and the mustard seeds begin to pop.
- Add the chopped onion, tomato, carrot, green peas, french beans, and bell pepper to the wok. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
- Pour in 1/2 cup of water, cover the wok, and let the vegetables simmer for 3-4 minutes to further soften them and create a light sauce.
- Add the toasted oats to the wok along with 1 cup of water. Stir well to combine. Season with salt and black pepper to taste.
- Cover the wok and cook for another 5 minutes, or until the oats are cooked through and have absorbed most of the liquid. Add more water if needed to achieve your desired consistency.
- Remove the wok from the heat and stir in the dried oregano and lemon juice. The lemon juice adds a bright, citrusy note that balances the savory spices.
