Recipe Notes

Good To Know

  • For extra flavor and texture, fold in a handful of chopped nuts (like walnuts or almonds) or seeds (such as sunflower or pumpkin) into the batter before cooking.
  • If you want to make the pancakes dairy-free, substitute milk with coconut or almond milk; both pair well with the earthy flavor of millets and the sweetness of banana and jaggery.
  • To enhance the natural sweetness and aroma, add a pinch of ground cardamom or cinnamon to the batter—this will give your pancakes a distinctly Indian touch reminiscent of traditional sweets.

Expert Tips

  • Soak the millets for at least 30 minutes before grinding to soften them and ensure a smoother batter.
  • Don't overmix the batter. A few lumps are okay and will result in lighter, fluffier pancakes.
  • Adjust the sweetness according to your preference by adding more or less jaggery or banana.

Storage Instructions

  • Leftover pancakes can be cooled and stored in an airtight container. Reheat them in a toaster or dry skillet.
  • They also make a great lunchbox snack when spread with nut butter or fruit preserves.
