Instructions

Prepare the Dough

  • In a large bowl, combine pearl millet flour, chopped fenugreek leaves, asafoetida, cumin seeds, red chili powder, garlic paste, and salt. Mix well.

Knead the Dough

  • Make a well in the center of the dry ingredients. Add 2 tablespoons of oil to the well. Gradually add water, mixing and kneading until a stiff, slightly firm dough forms. The dough should not be sticky.

Shape and Cook the Dhebras

  • Divide the dough into small, equal-sized balls. Lightly grease your palms with oil to prevent sticking. Roll each ball into a small, thick disc or patty (about 1/4 inch thick).

Cook on the Tawa

  • Heat a non-stick tawa (griddle) over medium heat. Cook the dhebras on the tawa, flipping once, until they are golden brown and cooked through on both sides. Cook time will vary, about 2-3 minutes per side.

Serve

  • Serve the hot Bajra Methi Na Dhebras immediately. They are delicious on their own or with a side of chutney or yogurt.

Recipe Notes

Expert Tips for Perfect Bajra Methi Na Dhebra

  • For extra flavor, add a pinch of ajwain (carom seeds) to the dough.
  • If your dough is too dry, add a teaspoon of water at a time until you reach the desired consistency.
  • Don't overcrowd the tawa; cook the dhebras in batches to ensure even browning.
  • For a crispier dhebra, use a little extra oil for cooking.
