Ingredients
For the Pancakes
- 1 cup Multi-Millet Batter i used farmz2familiez brand
- 1/2 tsp Salt or to taste
- 1 tbsp Oil for greasing
For the Toppings
- 4 Quail Eggs
- 2 tbsp Coriander chopped
- 1 tbsp Sesame Seeds roasted
Instructions
- Heat a large nonstick or cast-iron skillet over medium heat. Lightly grease the skillet with oil. This prevents the pancakes from sticking.
- Working in batches, drop the batter by the tablespoon onto the hot skillet. Ensure there is enough space between each pancake.
- Cook for about 2 minutes, or until bubbles appear on the surface and a few have burst. This indicates that the underside is cooked.
- Flip the pancakes and cook for another minute until the underside is golden brown. The second side cooks faster.
- Repeat with the remaining batter, wiping the skillet clean between batches if necessary. This ensures even cooking.
- To prepare the toppings, crack a quail egg directly onto the skillet alongside the pancakes. Season with a pinch of salt.
- Once the pancakes are cooked, top them with the fried quail eggs, sprinkle with freshly chopped coriander, and finish with a sprinkle of roasted sesame seeds.
