Ingredients
Porridge & Grains
- 200 gm Oats quick-cooking oats, or rolled oats (soak for 15-20 minutes before use)
- 20 gm Gram Flour besan
Vegetables
- 5 florets Cauliflower
- 2 medium Carrot chopped
- 50 gm Pumpkin cubed
- 1 medium Bell Peppers capsicum, finely chopped

Instructions
Prepare the Vegetables
- Wash and soak the oats for 15-20 minutes. Chop the cauliflower, carrot, and pumpkin into small pieces. Blanch the vegetables until slightly tender, then coarsely chop or pulse in a food processor.
Mix the Ingredients
- Squeeze out excess water from the soaked oats. In a large bowl, combine the oats, blanched vegetable mixture, chopped green chilies, coriander, tomato (if using), salt, red chili powder, gram flour, and black pepper. Mix thoroughly until well combined.
Form and Cook the Kebabs
- Shape the mixture into small kebab shapes. Insert a cube of processed cheese into the center of each kebab. Heat olive oil in a non-stick pan over medium-low heat. Gently sauté the kebabs for 7-8 minutes per side, or until golden brown and heated through.
Serve
- Serve the hot, cheesy vegetable porridge kebabs immediately. Garnish with extra chopped coriander and a dollop of your favorite chutney or yogurt.
