Prepare the Vegetable Kebabs

  • Grate the carrots and cauliflower.
  • In a bowl, combine the grated carrots, cauliflower, peas, mashed potato, paneer, green chilies, Kashmiri chili powder, cumin seeds, coriander, and salt.
  • Mix well to combine all ingredients.
  • Shape the mixture into small kebabs.
  • In a plate, add cornflour. Roll each kebab in cornflour to coat them evenly.
  • Heat oil in a pan over medium heat and shallow fry the kebabs until golden brown and cooked through.
  • Set aside.

Prepare the Masala Gravy

  • In a blender, combine the onion, green chilies, cardamom pods, cloves, and bay leaves. Blend into a smooth paste.
  • Heat oil in a pan. Add fennel seeds and cumin seeds; sauté until fragrant.
  • Add the onion-spice paste and sauté until softened.
  • Stir in the cashew paste, Kashmiri chili powder, turmeric powder, cumin powder, coriander powder, salt, yogurt, and sugar. Mix well.
  • Cook for a few minutes, stirring frequently.
  • Add hot water and bring to a simmer. Cover and cook until the gravy thickens and releases oil from the sides of the pan.
  • Stir in the chopped coriander leaves. Adjust salt as needed.

Assemble and Serve

  • In a serving dish, arrange the fried kebabs. Pour the prepared masala gravy over the kebabs.
  • Garnish with fresh coriander leaves.
  • Serve hot with naan, roti, or your favorite Indian bread.
