For the Mint-Chili Paste

  • 1 cup Mint Leaves fresh, tightly packed
  • 1-2 Chili adjust to your spice preference, green
  • 1 inch Ginger

For the Chaas

  • 1 1/2 cup Yogurt full-fat recommended, thick and chilled
  • 1/4 tsp Chaat Masala or to taste
  • 1/2 - 3/4 tsp Salt adjust to taste
  • 1/2 cup Water or more, to reach desired consistency

Instructions
 

Prepare the Mint-Chili Paste

  • Wash and roughly chop the mint leaves, green chili, and ginger.
  • Combine the mint, chili, and ginger in a blender or food processor. Add a small amount (about 1/4 cup) of the yogurt to help it blend smoothly.
  • Blend until a smooth paste forms.

Make the Chaas

  • In a large jar or blender, combine the remaining yogurt, salt, and chaat masala.
  • Add the mint-chili paste to the yogurt mixture.
  • Add cold water gradually, blending until you reach your desired consistency (it should be slightly thin).
  • For a frothier chaas, blend for about 45-60 seconds.

Serve

  • Pour the Mint Chaas into glasses filled with ice.
  • Garnish with fresh mint leaves and a sprinkle of chaat masala, if desired.
