Ingredients
Spices & Seeds
- 1 tsp Fennel Seeds
- 1 tsp Poppy Seeds
- 5 whole Peppercorn black peppercorns
- 0.5 tsp Cardamom powder
Nuts & Seeds
- 30 whole Almond
Dairy & Sweetener
Flavorings & Garnish
- 6-8 strands Saffron strands
- 0.5 tsp Rose Water rose essence can also be used
- 1/4 cup cup Pistachio for garnish
Instructions
Prepare the Spice Mixture
- Soak the almonds, fennel seeds, poppy seeds, and black peppercorns in water for at least 20 minutes. Drain well.
Boil the Milk
- Bring the milk to a boil in a saucepan over medium heat. Reduce heat and simmer for 10 minutes, scraping down the sides occasionally to prevent sticking.
Sweeten and Infuse
- Stir in the sugar and saffron strands. Continue to simmer until the sugar is completely dissolved.
Grind the Soaked Ingredients
- Grind the soaked almonds, fennel seeds, poppy seeds, and peppercorns into a smooth paste using a blender or food processor. Add a little water if needed to achieve a smooth consistency.
Combine and Steep
- Remove the milk from heat. Let it cool slightly before adding the ground spice paste, stirring well to ensure no lumps form. Stir in the cardamom powder.
Strain and Infuse
- Allow the mixture to sit for at least 20 minutes, allowing the flavors to blend. Strain the Thandai through a fine-mesh sieve, discarding the solids. Stir in the rose water.
Chill and Serve
- Refrigerate the Thandai for at least 2 hours to chill thoroughly. Garnish with finely chopped pistachios and a few saffron strands before serving.

- For an even richer flavor, toast the almonds lightly in a dry pan before soaking.
