For the Thandai Paste

  • 2 cup Milk dairy or non-dairy
  • Sugar cane sugar, jaggery, or honey, to taste
  • 1/4 cup Ice Cubes optional

Prepare the Thandai Paste

  • Grind the soaked almonds, cashews, fennel seeds, melon seeds, cardamom pods, and black peppercorns into a smooth paste using a blender with 1/2 cup of water. Add more water if necessary to achieve a smooth consistency.

Strain the Paste

  • Strain the paste through a fine-mesh sieve or cheesecloth, pressing to extract all the liquid. Discard the solids remaining in the sieve.

Combine and Serve

  • In a pitcher, combine the strained Thandai paste with cold milk and sugar. Stir well to dissolve the sugar. Add ice cubes for a chilled drink.

Garnish the Glass (Optional)

  • Lightly brush the rim of a tall glass with honey. Dip the rim into a shallow dish of fennel seeds to coat. Pour the Thandai into the prepared glass and serve immediately.
