Ingredients
 

Main Ingredients

  • 250 gm Okra bhindi, small sized. wash and thoroughly dry before slicing.
  • 4 tbsp Gram Flour besan
  • 3 tbsp Oil for sautéing the okra
  • 1 tbsp Clarified Butter ghee, for frying the gram flour
  • 1 tsp Coriander Powder dhania powder
  • 1 tsp Mango Powder adds tartness, amchur powder, dry
  • 0.5 tsp Chili Powder adjust to your spice preference, lal mirch powder, red
  • 0.25 tsp Turmeric Powder for color and flavor, haldi
  • 0.25 tsp Garam Masala a blend of ground spices
  • 0.5 tbsp Water for adjusting consistency, optional
  • Salt to taste

For Garnish

  • 1 Ginger 1/2 inch julienned or thinly sliced
  • 1 tbsp Lemon Juice
  • 1 tsp Water for pickling ginger
  • 0.5 tsp Sugar for pickling ginger
  • 1/2 bunch Coriander chopped, fresh, optional

Instructions
 

Prepare Pickled Ginger

  • Mix julienned ginger, lemon juice, sugar, and water in a bowl. Set aside for at least 40 minutes, or up to 3 hours.

Prepare the Okra

  • Wash and thoroughly dry the okra. Slice off the crown and tip. Make 2-3 slits in each okra without breaking it.

Sauté the Okra

  • Heat oil in a pan. Add the okra and sauté until crisp and browned. Drain on paper towels.

Roast the Gram Flour

  • In the same pan, add ghee. Add gram flour and fry, stirring constantly, until fragrant and golden brown, and fat starts to release.

Combine and Season

  • Add the sautéed okra to the roasted gram flour. Stir in coriander, dry mango, red chili, and turmeric powder. Add salt and optional water. Stir well and cook until the spices coat the okra evenly.

Finish and Serve

  • Stir in garam masala. Garnish with the pickled ginger and chopped coriander. Serve hot with roti, chappati, dal, rice, or curry rice.
