Prepare the Batter

  • Whisk together the gram flour, salt, red chili powder, turmeric powder, and dry mango powder in a bowl. Add the mashed potatoes, grated carrots, onion, and green chilies. Gradually add water while whisking continuously to create a smooth, pourable batter. Add the lemon juice and mix well.

Cook the Chilla

  • Heat a lightly oiled non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the hot pan and spread it into a thin, circular pancake using the back of the spoon.

Flip and Serve

  • Cook for 1-2 minutes per side, or until golden brown and cooked through. Drizzle a little oil around the edges to prevent sticking. Flip carefully when the edges start to lift and the top looks set. Serve the besan chilla hot with your choice of chutney, yogurt, or pickle.
