Ingredients
Okra
- 400 gm Okra chopped
Aromatics and Spices
- 2 tbsp Mustard Oil or any other cooking oil
- 1 pinch Asafoetida hing
- 1/2 tsp Cumin Seeds
Curry Paste
- 1 Onion finely chopped
- 1 knob Ginger finely chopped
- 1 Chili green, slit vertically
- 1 Tomato roughly chopped
- 1/2 tsp Garam Masala
- 1/4 tsp Dry Mango Powder dry mango powder
- 1.5 tsp Salt or to taste
Instructions
- Heat 1 tablespoon of mustard oil in a pan or wok over medium heat. Add the chopped okra. Sauté until the okra is crispy and cooked through. This helps to remove the sliminess.
- While the okra cooks, heat the remaining 1 tablespoon of oil in a separate pan over medium heat. Add the asafoetida and cumin seeds. Once the seeds crackle, add the chopped onion, ginger, and green chili. Sauté until the onions soften and turn translucent, about 5-7 minutes.
- Add the chopped tomatoes, garam masala, amchur powder, and salt to the onion mixture. Cover the pan and cook over medium-low heat until the tomatoes break down and become mushy, about 10-12 minutes. Stir occasionally. Continue cooking until the oil starts to separate from the masala, indicating it's ready.
- Add the cooked okra to the tomato masala. Stir gently to combine, ensuring the okra is well coated.
