Prepare the Filling

  • Combine mayonnaise, ketchup, sweet chili sauce, mustard seeds, salt, and pepper in a bowl. Add the julienned carrots, sliced cucumbers, and sweet corn. Mix well.

Assemble the Sandwich

  • Lay out six bread slices on plastic wrap or cling film. Lightly dampen the bread slices to help them stick together. Arrange the bread slices in a single layer overlapping slightly to form a rectangle.

Spread and Roll

  • Spread the cheese spread evenly over the bread. Top with the vegetable mixture. Add thin slices of cucumber and lettuce. Carefully roll the bread tightly using the plastic wrap to help.

Chill and Slice

  • Wrap tightly in plastic wrap and refrigerate for at least 30 minutes to allow the sandwich to firm up. Once chilled, slice into thick pinwheels and serve.

Make the Spicy Mayo Dip

  • In a small bowl, combine mayonnaise, Tabasco sauce, and chili flakes (if using). Mix well and chill before serving. Serve the pinwheel sandwiches with the spicy mayo dip.
