Ingredients
For the Taro Patties
- 2 Taro also known as banda, peeled and cut into 1/2-inch thick rounds
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1 tbsp Lemon Juice
- 1/2 cup Rice Flour
- 2 tbsp Oil for frying
For the Filling
- 1/2 cup Coriander dhania, finely chopped or 2 tablespoons of fresh paste
- 1 tsp Chili Paste hari mirch, green
- 1 tsp Cumin Seeds jeera, roasted and ground
- 1/4 tsp Asafoetida hing
- 1/2 cup Yogurt curd
- 1 tbsp Ginger Garlic Paste
- 1 tsp Salt or to taste
- 1 tbsp Oil for the filling
Instructions
Prepare the Taro Patties
- Parboil the peeled taro until slightly tender. Cut into 1/2-inch thick rounds. In a bowl, combine the parboiled taro with turmeric powder, red chili powder, and lemon juice. Marinate for at least 15 minutes.
Fry the Taro
- Coat each taro round in rice flour. Heat oil in a pan over medium heat. Carefully fry the taro patties until golden brown and crispy on both sides. Set aside.
Make the Filling
- Heat oil in a pan. Add asafoetida, then sauté the coriander, ginger-garlic paste, and green chili paste for a minute. Add the cumin seeds and yogurt, stirring well. Cook until the mixture thickens and slightly dries.
Assemble the Sandwich
- Spread a layer of the filling on one fried taro patty. Top with another fried taro patty to create a sandwich. Serve immediately or at room temperature.
Garnish and Serve
- Garnish with a dollop of yogurt and crushed black pepper (optional). Serve warm or at room temperature.
