Prepare the Vegetable Filling

  • Finely chop all the vegetables (cauliflower, carrot, potato, green beans, bell pepper, and beetroot). In a large bowl, combine the chopped vegetables with ginger-garlic paste, green chilies, turmeric powder, red chili powder, ajwain, and salt. Mix well.

Make the Dough

  • In a large mixing bowl, combine whole wheat flour, soybean flour, and rice flour. Add the prepared vegetable mixture and mix thoroughly. Gradually add water while kneading to form a soft, pliable dough. Knead for 5-7 minutes until the dough is smooth and elastic. Cover the dough and let it rest for at least 15-20 minutes.

Roll and Cook the Parathas

  • Divide the dough into equal-sized balls. On a lightly floured surface, roll each ball into a thin, round paratha. You can use a cookie cutter or a cup to cut out a circle shape if desired.

Cook the Parathas

  • Heat a flat griddle or tawa over medium heat. Place a paratha on the hot griddle and cook for 1-2 minutes per side, or until lightly browned. Apply a little oil to both sides of the cooking paratha for a crispier texture.
