Ingredients
Vegetables
- 2 Tomato pureed
- 1 medium Onion sliced
- 8 Okra washed and wiped
- 2 Bell Peppers capsicum, cut into pieces
- 0.5 medium Cauliflower cut into small florets
- 1 8 oz Mushroom blanched
- 100 gm Cottage Cheese cubed, indian cheese
Spices & Aromatics
- 1 tsp Salt to taste
- 1 tsp Ginger-Chili Paste green
- 0.5 tsp Chili Powder red
- 0.25 tsp Turmeric
- 0.5 tsp Garam Masala kitchen king or similar brand
Other
- 2 tbsp Vegetable Oil
- 4-5 cup Water
Instructions
Prepare the Vegetables
- Blanch the mushrooms and set aside. Blanch the tomatoes, remove the skins, and puree them.
- Shallow fry the cauliflower, paneer, okra, and bell peppers separately until lightly browned and set aside.
Sauté Aromatics
- Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the sliced onion and sauté until light golden brown. Add the green chili ginger paste and sauté for 1 minute until fragrant.
Simmer the Curry
- Add the tomato puree to the pan and cook until softened and the raw tomato flavor is gone. Stir in the salt, red chili powder, turmeric powder, and garam masala. Add 4-5 cups of water and bring to a boil.
Combine and Cook
- Add all the pre-cooked vegetables (mushrooms, cauliflower, paneer, okra, and bell peppers) to the simmering sauce. Cover the pan and let it cook for 20 minutes, or until the vegetables are tender and the flavors have melded.
Serve
- Serve hot with rice, naan, or roti.
