Prepare the Vegetable Oat Mix

  • Preheat your oven to 375°F (190°C).
  • Line a baking tray with aluminum foil.
  • Add the chopped vegetables to the prepared tray.
  • Add the rolled oats, rasam powder, salt, and vegetable oil to the tray with the vegetables.
  • Mix all ingredients thoroughly until evenly combined.

Bake the Mix

  • Let the mixture marinate for at least 1 hour (up to 3 hours is fine).
  • Spread the mixture in a single layer on the baking tray.
  • Bake for 18-20 minutes, or until the oats and vegetables are crispy and golden brown.
  • Remove the tray from the oven and let the mixture cool completely to room temperature.
  • Store in an airtight container.

Prepare a Serving

  • To serve, add the desired amount of the oat mix to a mug or bowl.
  • Pour in enough hot water to cover the oat mix, and let it sit for 2 minutes to soften.
  • Stir and enjoy!
