Ingredients
Dry Ingredients
- 1 cup Rolled Oats
- ¼ cup Flax Seeds ground
- ½ cup Chocolate Chips dark
- ¼ cup Raisins
Wet Ingredients
- 1 cup Crunchy Peanut Butter
- ½ cup Honey
- ½ tsp Vanilla Extract
Instructions
- Toast the rolled oats in a medium skillet over medium heat for 2-3 minutes until fragrant. This enhances their nutty flavor. Transfer to a plate to cool completely.
- Toast the flax seeds in the same skillet for 3-4 minutes until they begin to splutter. Let them cool and then grind into a coarse powder.
- In a large bowl, combine the toasted and cooled oats, ground flax seeds, dark chocolate chips, and raisins.
- Add the crunchy peanut butter, honey, and vanilla extract to the dry ingredients.
- Mix thoroughly until the wet and dry ingredients are well combined and a sticky dough forms.
- Roll the dough into 1-inch balls. Place the energy bites on a parchment-lined tray.
- Refrigerate for at least 1 hour to firm up. This helps them hold their shape. The No-Bake Peanut Butter Oatmeal Energy Bites are now ready to enjoy!
