Dry Ingredients

Wet Ingredients

  • 2 tbsp Peanut Butter smooth or crunchy, your preference
  • 2 tbsp Honey or maple syrup, to taste
  • 1-2 tbsp Water add as needed to achieve desired consistency

Prepare the Dry Ingredients

  • Combine rolled oats, pistachios, and ground flax seeds in a food processor. Pulse until the pistachios are finely chopped and the mixture is evenly combined.

Combine Wet and Dry Ingredients

  • Transfer the oat mixture to a medium bowl. Add peanut butter and honey. Mix well to combine.

Adjust Consistency

  • If the mixture is too dry to form balls, add 1-2 tablespoons of water, one tablespoon at a time, until it reaches a consistency that holds its shape.

Form Energy Bites

  • Roll the mixture into small bite-sized balls (approximately 1 inch in diameter).

Chill and Serve

  • Place the energy bites on a plate lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up. Enjoy!
