- 1 tbsp Cocoa Powder unsweetened
- 1 tbsp Desiccated Coconut
- 1 tbsp Flax Seeds
Mix-ins
- 1 tbsp Peanut Butter
- 1/4 cup Berries mixed
- 1/8 cup Blackcurrants + 1 tbsp (approximately 15g) fresh or frozen
- 1 tbsp Peanuts roasted
- 1 tbsp Chocolate Chips dark, optional
- 1 tsp Baking Powder helps create a slightly lighter texture (optional)
Instructions
Prepare the Dry Ingredients
- Combine quick-cooking oats, cocoa powder, desiccated coconut, and flax seeds in a large bowl. Mix well.
Prepare the Wet Ingredients
- In a separate bowl, mash the bananas thoroughly. Add milk and honey (if using), and mix until well combined.
Combine Wet and Dry Ingredients
- Add the peanut butter to the mashed banana mixture. Gradually add the dry oat mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
Add Mix-ins
- Stir in the mixed berries, blackcurrants, and roasted peanuts. If using, add the dark chocolate chips now.
Bake the Flapjacks
- Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper. Pour the flapjack mixture onto the prepared baking sheet and spread evenly to form a roughly even layer about 1cm thick.
Baking and Cooling
- Bake for 30-35 minutes, or until the edges are golden brown and the center is set. Let the flapjacks cool completely on the baking sheet before slicing into squares. Store in an airtight container at room temperature.
