- 1 1/2 cup Rolled Oats powdered oats
- 1 cup Rolled Oats
- 1/2 cup Cashews or almonds; chopped
- 100 gm Butter softened, unsalted
- 1 tsp Baking Powder

Prepare the Date Filling
- Combine chopped dates and brown sugar in a saucepan over medium heat. Cook, stirring frequently, until dates are soft and begin to mash. Add 1-2 tablespoons of water if the mixture becomes too thick. Remove from heat and set aside to cool.
Make the Oat Mixture
- In a large bowl, combine powdered oats, rolled oats, cashews, and baking powder. Mix well.
- Cut in softened butter until the mixture resembles coarse crumbs and holds together when pressed.
Assemble and Chill
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Press half of the oat mixture into the prepared pan to form an even layer.
- Spread the cooled date filling evenly over the oat layer.
- Top with the remaining oat mixture, pressing firmly to compact.
- Cover the pan and refrigerate for at least 2 hours, or preferably overnight, to allow the bars to firm up.
Cut and Serve
- Once chilled, lift the bars from the pan using the parchment paper overhang. Cut into squares or bars of your desired size. Store in an airtight container in the refrigerator for up to a week.
