Ingredients
Dry Ingredients
- 1 1/2 cup Rolled Oats
- 1 cup Nuts mixed, or your preferred mix. roughly chop before using., pecans, pistachios, raw or toasted almonds
Wet Ingredients
- 1 cup Dates pitted medjool dates are recommended for their sweetness and texture.
- 1/4 cup Honey good quality honey or agave nectar. adjust to taste.
- 1/4 cup Peanut Butter creamy peanut butter, or substitute with almond or cashew butter.
Optional additions
- 1/4 tsp Vanilla Extract enhances the overall flavor.
- Pinch Sea Salt balances sweetness.
Instructions
Prepare the Nuts
- Chop the assorted nuts into smaller pieces and set aside.
Process the Dates
- Place the pitted dates in a food processor and process until they form a sticky paste, about 1 minute. It should resemble a dough and hold its shape when formed into a ball.
Toast the Oats (Optional)
- Lightly toast the rolled oats in a dry non-stick pan over medium-low heat for 2-3 minutes, stirring frequently, until lightly browned. Be careful not to burn them.
Combine Dry Ingredients
- In a large bowl, combine the toasted oats (if using), chopped nuts, and processed dates.
Combine Wet Ingredients
- In a small saucepan, combine the honey and peanut butter. Warm over low heat, stirring constantly, until melted and smooth. Stir in vanilla extract and salt (if using).
Combine Wet and Dry Ingredients
- Pour the warm honey-peanut butter mixture over the oat and date mixture. Stir until everything is well combined and the dates are evenly distributed.
Press and Set
- Line an 8x8 inch baking dish with parchment paper or aluminum foil, leaving some overhang on the sides for easy removal. Press the mixture firmly and evenly into the prepared dish.
Chill
- Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 30 minutes, or until firm. For faster setting, place in the freezer for 20 minutes.
Cut and Serve
- Remove from the dish and cut into bars. Store in an airtight container in the refrigerator for up to a week.
