Instructions

Preparing the Appam Pan

  • Heat a well-seasoned appam pan or a small non-stick skillet over medium heat. Lightly grease the pan with coconut oil.

Pouring the Batter

  • Pour 1/4 cup of appam batter into the hot pan, swirling the pan to evenly coat the bottom and create a thin layer. Leave the center slightly empty.

Cooking the Appam

  • Cook for about 1-2 minutes, or until the edges begin to set and lift slightly from the pan.

Adding the Egg

  • Carefully crack an egg into the center of the appam. Sprinkle with salt.

Cooking the Egg

  • Cover the pan and cook for another 2-3 minutes, or until the egg is cooked to your liking. The white should be set, and the yolk may be runny or firm, depending on your preference.

Serving

  • Carefully remove the Mutta Appam from the pan using a spatula. Serve immediately with chicken or vegetable stew. Repeat with the remaining batter and eggs.

Recipe Notes

Expert Tips for Perfect Mutta Appam

  • Use a well-seasoned appam pan for optimal results. If you don't have one, a small non-stick skillet will work well.
  • Don't overcrowd the pan. Cook the appams in batches to ensure even cooking and prevent sticking.
  • Adjust the cooking time according to your preferred egg doneness. For a runnier yolk, cook for a shorter time. For a firmer yolk, cook for a longer time.
  • Experiment with different toppings! Try adding chopped onions, chilies, or herbs to your Mutta Appam for an extra burst of flavor.
