Instructions

Prepare the Dosa

  • Heat a lightly oiled griddle or dosa pan over medium heat. Pour 1/4 cup of dosa batter onto the hot griddle and spread it thinly into a circle using the back of a ladle.

Cook the Dosa

  • Cook the dosa for about 2-3 minutes, or until the edges start to lift and turn golden brown.

Add the Egg

  • Crack an egg gently onto the cooked dosa. Use a fork to break the yolk and spread the egg evenly over the dosa.

Season and Finish

  • Sprinkle red chili powder and salt over the egg. Drizzle a little oil around the edges and a few drops over the egg.

Flip and Cook

  • Cook for another minute, or until the egg is set and the dosa is golden brown. Carefully flip the dosa and cook for 30 seconds on the other side.

Serve

  • Remove the dosa from the pan and serve immediately with sambar and chutney, if desired.

Recipe Notes

Expert Tips for the Perfect Egg Dosa

  • For extra crispy dosas, use a well-seasoned griddle or pan.
  • Don't overcrowd the pan; cook dosas in batches to ensure even cooking.
  • If the dosa batter is too thick, thin it out with a little water.
  • Feel free to experiment with other toppings, such as chopped onions, cilantro, or cheese.
