Ingredients
For the Egg Yolk Garland
For the Egg White Cake
- 2 pod Cardamom green cardamom pods, or 1 tsp ground cardamom
- 1 Disposable Cup small, with 3 small holes poked in the bottom
- 1 Needle for poking holes in the disposable cup
Instructions
Prepare the Egg Yolk Garland
- Separate egg yolks and whites. Lightly whisk the egg yolks and set aside.
- Boil water and sugar in a saucepan to create a light syrup.
- Poke three small holes in the bottom of the disposable cup using a needle.
- Gently pour the whisked egg yolks through the holes into the boiling syrup, rotating the cup to create continuous strands.
- Cook for 1-2 minutes, gently moving the strands with a slotted spoon to prevent sticking.
- Remove the cooked yolk strands and set aside to cool. Repeat until all yolks are used.
- Allow the remaining sugar syrup to cool completely.
Prepare the Egg White Cake
- Once the sugar syrup is cool, gently whisk it into the egg whites.
- Add the ground cardamom (or finely crushed cardamom pods) and whisk until well combined.
- Steam the egg white mixture in a steamer for 20-25 minutes, or until fully cooked.
- Remove from steamer and let cool completely.
Assemble and Garnish
- Once the egg white cake and yolk strands are cooled, carefully slice or cut the egg white cake into smaller pieces.
- Arrange the cooled egg yolk strands on top of the egg white cake pieces. Garnish with fresh cherries.
