Molten Lava Cake With Almond Crumble And Strawberry Basil Coulis

  • For Lava Cake
  • 129 gms semi-sweet dark chocolate
  • 120 gm butter
  • 2 whole eggs
  • 70 gm Sugar
  • 70 gm all purpose flour maida - sieved
  • Butter - for greasing ramekins
  • For Almond Crumble
  • 100 gm butter
  • 100 gm Sugar
  • 100 gm flour
  • 120 gm almond powder
  • 100 gm chopped almonds
  • salt a pinch
  • For Strawberry Basil Coulis
  • 2 cups of strawberries chopped
  • 50 ml mixed fruit juice
  • 2 tbsp Sugar
  • 4-5 basil leaves


  • For Cake: Melt the chocolate in a double boiler or in a microwave.
  • In a separate bowl, whisk eggs and sugar until light and fluffy.
  • once the chocolate is melted, remove from the heat and add in the butter. Mix until the butter melts.
  • Add Chocolate butter mixture into the eggs slowly and mix.
  • Add flour and fold until well incorporated
  • Butter bottom and sides of ramekins and pour in the mixture about 3/4 way full.
  • Place the ramekins on the baking tray in the preheated oven 180 C for 15 minutes
  • Demould and serve immediately with Icecream.
  • For Almond Crumble: In a large bowl mix all the dry ingredients
  • Add the butter and mix till you get a crumbly texture.
  • Add the chopped almonds
  • Place the mixture on the baking tray lined with butter paper and bake in preheated oven at 160 C until light golden brown
  • For Strawberry Basil Coulis : In a pan put chopped Strawberries fruit juice and sugar and cook till you get a thick jam add basil leaves, blend and keep aside.

  • Serve the Molten lava cake with vanilla icecream, cocoa powder strawberry basil coulis and almond crumble.
