Eggless Gajar-Methi-Badam Chocolate Cake ( Carrot – Fenugreek – Almond Chocolate Cake )

The cake depicts Mother Earth with the White part being the Ocean ( the topping of candy studs being the precious stones), the Dry Fruit is the desert and the greenery shows Fertile Area. Health Benefits: The Organic carrots, almonds are good for eyes. The Raisins are useful as a remedy for Hypo tension/low B.P. Pure cocoa powder is good for heart. This recipe is good for people who are lactose intolerant and vegan.

  • For Cake Batter - 2 Cups Organic Whole Wheat Flour
  • 2.5 Cups Powdered Sugar
  • 4 tbsp Pure Cocoa Powder without milk content
  • 1/2 Cup Organic Carrot Juice
  • 2 tbsp Organic Fenugreek leaves Juice
  • 2 tbsp Caramel Sugar
  • 1/4 Cup Almond Milk
  • Vanilla Essence- 3 or 4 drops
  • 3/4 cup almond butter
  • 2 tbsp vegetable oil
  • 3 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • For Cake Dressing: For First Part - 2 Tablespoon Grated Organic Carrot
  • Organic Fenugreek leaves as required
  • For Second Part - 2 Tablespoon Almond Butter
  • 4 tbsp Powdered Sugar
  • 1 tbsp Almond Milk
  • For Third Part - Almonds & Raisins as required
  • For Candle - 3 layers of Mango Jelly rolled
  • Pure Cocoa powder for smearing the roll
  • Organic Carrot slice as wick
  • Almond butter as Melting Wax


  • Sieve the whole Wheat Flour. Add Baking powder,salt to the flour.Now Sieve Twice. Pre heat Oven for 15 minutes at 180 degree Centigrade .
  • In the meanwhile, take a Bowl, add the Carrot juice,almond butter, Fenugreek leaves juice, Almond milk,Caramel Sugar,Vanilla Essence & Sugar Powder. Stir Well so that there should not be any lumps/bubbles.
  • Now Slowly add the prepared Flour to this mix and stir properly. Note that no lumps are formed & blend the mix thoroughly.
  • Take the cake mould, grease with vegetable oil. Sprinkle some organic wheat flour.
  • Transfer the batter into half of the greased mould. Bake it for approximately 45-50 minutes .
  • Once its is baked, allow the cake to cool for some time.
  • Directions for the Icing preparation : Take a bowl, add 2 tablespoon of Almond butter , 1 teaspoon of Almond milk,4 tablespoon of Sugar Powder. Blend thoroughly.
  • Apply (1/3)rd part of the cake with this icing using a Brush.Dress it with home made sugar candy studs.
  • Now Dress the other (1/3)rd part with Dry Fruits and raisins. Then dress the last part with grated organic carrot and fenugreek leaves.
  • For the Candle Preparation - Take the homemade mango jelly and smear the cocoa powder paste over it ( add little water and sugar powder to the paste ).
  • Roll these into a cylindrical form with the help of thread. For the wick portion, cut a slice of carrot and make wick out of it.
  • Cut the cake into pieces and serve the healthy cake.


To check whether the cake is evenly cooked or not , prick a toothpick into the cake. If it doesnot stick, then your cake is baked properly smile.
