Instructions

  • In a mixing bowl, combine the malai, oil, and sugar.
  • Whisk vigorously until the sugar dissolves completely and the mixture forms a smooth paste.
  • In a separate bowl, whisk together the all-purpose flour, semolina, baking powder, baking soda, and salt. This ensures even distribution of the leavening agents for a consistent rise.

  • Add the dry ingredients to the wet ingredients, along with the milk. Mix until just combined. Do not overmix, as this can result in a tough cake.
  • Allow the batter to rest for 5 minutes. This allows the gluten in the flour to relax, resulting in a more tender crumb.
  • Preheat your oven to 180°C (350°F). Preheating ensures the cake bakes evenly.
  • Gently fold in the tutti frutti. Folding prevents the batter from deflating.
  • Grease a loaf pan and pour in the batter.

  • Sprinkle some extra tutti frutti on top and gently tap the pan on the counter to release any air bubbles.
  • Bake for 25 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 5 minutes before inverting it onto a wire rack to cool completely.
  • Enjoy your delicious, moist, and tender Eggless Malai Cake!

Recipe Notes

Good To Know

  • Do not add oil if you are using malai accumulated from full-fat cream milk.
  • You can bake this in a microwave's convection mode at 160°C for 25 minutes.

Expert Tips

  • For a richer flavor, consider using a combination of whole wheat flour and all-purpose flour.
  • Don't overmix the batter, as this can lead to a tough cake. Mix until just combined.
  • A toothpick inserted into the center should come out clean when the cake is done.

Storage Instructions

  • Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
